Crunchy Salad Recipe

  This recipe is based on a previous recipe on my blog, as well as a recipe I have made my entire life. Not sure where we got it, all I remember is this was in my grandma's recipe book but I have made some improvements and changes over the years. I have had this my whole life and it will forever be one of my favorite dishes. This is the new and improved small-batch, which makes about two hearty bowls. Ingredients: 1 pack of coleslaw mix (non-sauce) 2 packs of crushed ramen (no seasoning) 1 bundle of  green onions, chopped 1 pack of cooked Sweet Earth "Chicken" strips 1/2 teaspoon of salt 1 teaspoon of black pepper 5 tables spoons of sugar 2 tablespoons of vinegar 6 tablespoons of vegetable oil Cook the chicken, chop the onion, crush the ramen and add everything into a bit dish. Mix and you have your salad. And perfection.

How to make the perfect sushi rice: Ingredients: 1 cup of Kaneyama Sushi Rice  1 1/2 cups Water (The ratio is about 1:1.25) Start by cleaning the sushi rice at least 4 times till water runs clear by swishing the rice in water and draining. After the final drain add the cleaned rice to a small pot. Let the rice soak in the water for 20 minutes. After 20 minutes cover and cook over medium heat until it starts to boil. After it starts to boil turn it down to low and let sit for 13 minutes or until the water is gone / not visible. After 13 minutes take off the burner and let sit for 10 minutes leaving the cover on the steam. After that, you have perfect sushi rice. I would recommend pairing with seaweed and your favorite sushi toppings. This is the first time I have been able to make sushi rice all on my own. Veggie Bowl Food Truck Review

  There are two known veggie bowl locations and I decided to adventure off to Oregon City and try the newly added food truck.  The first time I went there I got the Hearty Veggie West which contained brown rice, quinoa, kale, tomatoes, mixed greens, avocado, black beans, black olives, flaxseed, cilantro, and Richi's Sauce. However I did remove the quinoa, kale, and flax seed knowing full well I would not enjoy them. And then added their Teriyaki Soy Curls, which if I had to say something they are known for it would be this.  Honestly, it turned out way better than I expected. Everything was fresh and tasted great and I was really happy with the one that I choose knowing I like all those other ingredients. And the soy curls tasted great, they say they taste like chicken which I don't entirely agree but to be fair I haven't had chicken in years. Vegan:  The avocado ranch I didn’t care for, it had a weird aftertaste. The nachos I loved the cheese but you could tell the guacamole was frozen. If I got it again I’d do the vegan cheese but substitute the guacamole for fresh avocados. The fries were good. I got the Korean bbq bowl and it wasn’t what I expected. It was edible didn’t have a strong bbq taste so it was disappointing. The chicken tenders had an after taste which was weird because we have had that kind before not sure what they did to it. I noticed they put their own batter on top of the gardin chicken. I tired a small piece of the mushroom lentil burger and I liked it I’ll probably order it next time.  Vegetarian: The mushroom lentil burger was absolutely amazing I definitely want it again and would absolutely recommend it. The fries were good classic fries. The ranch and avocado ranch had a lot of dill in it, and I like dill but it was too much. Vegan: I liked the bbq salad I got, it does need to be mixed because the bbq is at the bottom and I got confused about the bacon. I really liked it, I would get it again and I’d recommend it to anyone and it’s pretty big I’d probably share it with someone. I didn’t care for the peanut butter pudding cup, it wasn’t sweet, I would suggest it to anyone but it was edible. I’d like to go back and try some new things and see if there are other things I like. I like that it’s in an outside mall so it’s nice for when you with other people that may not want to eat there with you.  Vegetarian:  I liked the crispy chicken wrap it was really tasty, their ranch was really good I’d highly recommend it. I wasn’t a huge fan of the lettuce but that’s a personal preference, I’d definitely get the chicken and ranch again maybe in a different dish. I was really excited about the pudding but it was really disappointing, it wasn’t sweet at all the chocolate chips were just bitter. I wouldn’t recommend it to

Veggie Grill Review

This time we will be doing it by food because we got a whole bunch of food to try and we are with the whole family. So this post will be all over the place since so many people will be commenting. Each period will be the end of a thought. Brownie:  Was good. Tasted like a regular good brownie. Crumbly. Yummm. A non-vegan person likes it. The baby also really enjoyed it. Mac and cheese: the baby liked it a lot, I liked that it was dairy-free just like the restaurant. It was a good portion size for a toddler, it wasn’t too much or too little.  Blt: I liked how different it was because it had a vegan pesto which made it new. I felt they needed to add more vegan bacon. But other than that really good. Mashed potatoes: I really really liked their version of mashed potatoes it was made of cauliflower. Things that were good: mandarin oranges. sweet potatoes fries. Ranch. Pepper Sause. Buffalo (but gotta be craving it). Sweet orange sauce.  Wings (chicken fingers): these were my least favorite

Baked Chimichanga Recipe

This is for one batch which makes about 6-7 chimichangas. 1 can of refried beans  A handful of cheese A handful of cooked or frozen fake meat A few scoops of taco seasoning Tortillas Preheat oven to 350 Mix all the beans, cheese, meat, and seasoning together in a bowl. Once we’ll combine, place a scoop in tortilla and fold. Place on an oiled pan. Rub oil on top of burritos. Bake for 20 minutes, turning halfway through.
